Healthy Steak Tacos
Craving Mexican food? There’s no need to go out for a heavy, calorie-loaded Mexican dinner. Forgo the extra fat and calories, and instead create this delicious steak taco meal for your family. It combines savory and sweet flavors and can be prepared in less than 25 minutes!
Chipotle Flank Steak Tacos With Pineapple Salsa
Ingredients
• 12 whole grain, high fiber tortillas, check your lable for any added sugar.
• 1 teaspoon extra-virgin olive oil
• 1 teaspoon chipotle chili powder plus 1 pinch, divided
• 1 teaspoon Kosher salt, divided
• 1 pound flank steak beef, trimmed of fat
• 1 pineapple, peeled, cored, and cut into 1/2-inch-thick rings
• 1 red bell pepper, finely diced
• 1/2 cup minced red onion
• ½ cup chopped cucumber or tomato or both
• 1/4 cup chopped fresh cilantro
•3 tablespoons red-wine vinegar
Preparation
1. Preheat grill to high. Stack tortillas and wrap in heavy-duty foil. Combine oil, 1 teaspoon chipotle powder, and 1/2 teaspoon salt in a small dish. Rub mixture into both sides of steak. Place the tortilla stack on the coolest part of the grill or upper warming rack, if possible, and heat, flipping once, until warmed through and very pliable.
2. Meanwhile, grill the steak for 4 to 6 minutes per side for medium, or until desired doneness. Grill pineapple rings until moderately charred, 1 to 2 minutes per side. Remove the tortillas, steak, and pineapple from the grill. Let the steak rest for at least 5 minutes before slicing very thinly crosswise into strips.
3. Meanwhile, dice the pineapple and transfer to a medium bowl. Add bell pepper, onion, cucumber/tomato, cilantro, vinegar, the remaining pinch of chipotle powder, and the remaining 1/2 teaspoon salt; toss to combine. Serve the sliced steak in the warm tortillas with the pineapple salsa. You can also add a tablespoon of nonfat plain Greek yogurt as a sour cream substitute.
Makes 6 servings of a healthy low glycemic dinner

Talk to Yourself… becasue you are listening!
It used to be that when we are talking to ourselves people would think we had just escaped the lunny bin. We can get away with it a little easier these days with a cell phone and a blue tooth…But maybe it’s not so crazy after all…
Self-talk really does work, whether it is positive or negative. I teach my clients to do affirmations or incantations every day. Lift your spirits, improve your attitude, and prolong your motivation every single day by telling yourself that you can and will succeed. The opposite also applys. If you keep telling yourself you can’t do it, or it’s too hard, or “i’m just a foody” … then it will become true. Weight loss is 90% attitude, get the right one and your actions toward it’s attainment will be a no brainer…
You may even find that it is helpful to say self-affirming phrases out loud, and put your whole body into it…Your roommates may think you’ve gone crazy, but when you find it is quite effective, you won’t mind.
Look in the mirror today, and say, “Nothing is going to stop me from meeting my weight loss goal.”

This recipe is a low glycemic recipe for a main meal. Suitable for Low Gi Diets.Serves 4 big eaters or 6 medium eaters.
Preparation Time 20 - 25 minutes.

Ingredients:
4 chicken breasts or 8 chicken thigh fillets.
1 spanish (brown) onion, finely chopped.
4 cloves garlic, finely chopped.
2 stems of fresh basil leaves, finely chopped or 6 teaspoons basil paste or Pesto sauce.
A little vegetable oil. Virgin olive oil is good, but any will do.
A selection of vegetables, such as, spinach, chard (silverbeet), brocolli, courgette (zucchini), squash, fresh green french or runner beans, mushrooms, sweet green pepper(capsican) and chinese cabbage. Chop these into bite size pieces. You can pretty much eat as much of these as your family can stand.
1 small sweet potato cut into 1/2 inch of 1cm slices - 4 oz or 125 gram per serve.
1 can Italian tomatos ( should have no added sugar).
Method:
Gently brown the chicken for 5 to 10 minutes in a frying pan with a little oil. Season with salt and black pepper. Don’t cook all the way through. Remove from the frying pan and put to one side.
In the same pan, fry the onion and garlic gently, until golden brown. Add the basil leaves and canned tomatos and put the chicken back into the frying pan. Simmer until the chicken is cooked, about 10- 15 mins. Cut through a piece of chicken to check if it is done.
In a separate frying pan, add a liitle vegetable oil, a clove of chopped garlic and the vegetables(not sweet potato) and fry gently until just tender.(If you prefer a milder garlic flavour, then brown the garlic before adding vegetables.) Salt and pepper to taste.
In small saucepan, add a little water and heat until boiling. Add the sweet potato pieces and simmer approx 7 minutes until tender. (Or in a microwave proof dish, cook sweet potato on high for about 5 mins, until soft.)
Serve and enjoy!

Change your life step: 10- Persistence, never give up!

In business or school, if you don’t stick with something you will not be successful at it, right? As in the case with diets or weight loss programs, how many of them worked until you just gave up and went back to your old habits? All of them, or you wouldn’t be here now. What those programs lack are the lessons on how to change your life and your mind on how you think about food and exercise. Persistence is forming a habit, and not giving up. These are habits you must adopt, daily.
1. You must go back to step one and look at what brings you here in the first place. What kind of pain will you be in (or stay in) if you don’t follow through? What will your life be like if you go back to your old habits and continue to gain weight? Get that emotion and picture in your head!
2. Keep your vision board where you can see it and focus on it daily.
3. Keep your goals right in front of you so you know where you are and if you’re on track, or not.
4. Make sure the action part of your MAP is in your schedule!
5. Don’t skip your affirmations, this will help keep that negativity that creeps in and takes us down.
6. Ask your higher power for guidance and strength…. You will get it!
7. Stay plugged in, continue with your support group, weight loss partner, trainer, or coach.
By now, hopefully some of these thing are already habits, but write it down , put it on your to do list, what ever it takes to incorporate these things in your life daily. The more persistent you are the more success you’ll have. These are not hard things to do…just make them part of your day and you will happier and healthier in no time! Have you ever noticed people associate with other people like themselves? Millionaires don’t hang out with minimum wage workers, athletes don’t mix with couch potatoes, and you don’t see health nuts hang out at the corner bar with a guy named Smokey Joe.
The best way to change your life and continue to grow and improve is to position yourself around others who are either experts in that area or others who are have similar goal and will encourage you, give positive advice and keep on track.
If you hire a personal trainer that is so enthusiastic about health and fitness it’s bound to rub off on you, or if you join an exercise class and you all decide to go somewhere after, chances are, as a group, you all make healthier food choices. Being involved in a group trying to lose weight, the others will not only encourage you, expect more from you than you may expect from yourself, but there is power in knowing you are helping and encouraging them. One of our basic human needs is the need to contribute.

Same goes for the opposite. If you surround yourself with people that have unhealthy habits and don’t have very high standards, eventually, it will rub off on you as well…. I know that often times you are surrounded by family that may not have the best habits, but love your family, and choose your peers. Being an example to them is all you can do.
Staying “plugged in” to a group is your best route to lasting success. Just knowing someone else cares about your success will keep you going.
